Scrambled Egg Muffins Print

Makes 12 muffins


  • 8 eggs
  • 1/3 cup rice milk
  • ¼ teaspoon ground sage
  • 1/3 cup chopped green peppers, onion or mushrooms
  • 1 Tbsp. chopped chives
  • ¾ teaspoon Dijon mustard
  • Vegetable oil spray
  • 4 vegetarian sausage patties, low-salt, cooled and sliced (MorningStar Sausage Patties)

Preheat oven to 350F. Whip together the eggs, rice milk, chives, green peppers, Dijon mustard, ground sage and diced sausage patties. Spray non-stick muffin cups with vegetable oil; pour egg mixture into each muffin cup (less than 1/3 cup). Place in the middle of preheated oven and bake for 15-20 minutes. Bake until firm. Remove from oven, let cool for a few minutes before serving. Heat resistant spatulas work very well to help remove egg muffins from the tin.

Broiled Grapefruit Print

Makes 2 servings


  • 1 grapefruit
  • 2 tbsp. Honey or Agave Nectar
  • 1 tbsp. Brown Sugar
  • 2 tsp. Cinnamon

Turn the broiler in your oven on to High. Cut grapefruit in half, and lightly loosen the skin from the fruit. Drizzle honey, brown sugar, and cinnamon. Place in the oven on a pan for 3-10 minutes, until the sugars are caramelized until desired.

Oopsies Bread Print

Makes 8 servings


  • 3 eggs
  • 3.5 ounces of cream cheese
  • Pinch of salt
  • ½ teaspoon baking powder

Separate the eggs with the egg whites in one bowl and the eggs yolks in another. Whip the egg white together with the salt until very stiff. You should be able to turn the bowl over without egg white moving. Milk the egg yolks and the cream cheese well. Gently fold the egg white into the egg yolks mix – try to keep the air in the egg whites. Put into 6 or 8 smaller oopsies on a baking sheet Bake in the middle of the oven at 300 degrees for about 24 minutes – until they turn golden. Oopsies can be eaten as a bread or as a bun or hotdog or hamburger.
